2021 Waveform Pinot Noir

Smooth, balanced, and fruit-forward: this is what exceptional Pinot Noir from Oregon tastes like.
It all starts with own-rooted Pinot Noir lovingly dry-farmed at a high elevation site in the Dundee Hills. We hand pick the fruit at its peak, then macerate and cold-soak the berries for 5 days before starting native yeast fermentation. When fermentation is complete, we only use free run juice and a light first press, transferring the wine into French oak barrels for 10 months élevage. We select only our favorite barrels for each year’s release, and it shows in this delightful cuvée.
The 2021 Waveform Pinot Noir is ruby and translucent in the glass. On the nose, you’ll detect huckleberry, red cherry, and baking spice. Take a sip and revel in fresh red and black fruit notes: equal parts alpine strawberry, cranberry, cherry, and plum. The long finish is laced with crushed-rock minerality.
This wine is delicious on its own, or paired with a wide variety of meat or vegetable dishes. We love it with miso-cured salmon, bavette steak, and pasta primavera.
